Grilled Asparagus Recipes

Light yet flavorful, these grilled asparagus recipes are perfect for a luncheon or outdoor menu.   Grilling baskets are almost essential for small or delicate foods like fish and vegetables.  If using, the cooking time may be a few minutes longer.  

 

Grilled Asparagus Recipe

Serves 4-6

1 pound  jumbo asparagus, bottoms trimmed, lower stalks peeled
6 tablespoon extra virgin  olive oil
4 tablespoons  fresh herbs, chopped.  Use chives, basil, thyme, parsley or mint, alone or in combination
2 tablespoons fresh  lemon juice
Kosher salt and freshly ground black pepper to taste
Parmesan or other hard grating cheese to taste
Cherry, pear or grape tomatoes (optional)

Use the temperature and grilling method recommended by your grill manufacturer for vegetables.

Prepare your grill.  In a large bowl, toss the asparagus with 2 tablespoon of the olive oil and a healthy pinch of salt.  Lay the asparagus on the grill or use a grilling basket.  Grill, turning occasionally, until browned and tender, about 8-12 minutes. 

In a bowl, whisk the lemon juice with salt and pepper to taste.  While whisking, drizzle in the remaining olive oil.  Lay the asparagus in a serving dish and sprinkle with the herbs and dressing and a generous topping of cheese.  Garnish with tomatoes if using.


 

 

 

Grilled Asparagus with Green Onions and Fried Eggs
 Serves 4

This is a perfect brunch dish.  Creamy eggs, melting cheese and crisp bread crumbs are simple but delicious.

1 pound  jumbo asparagus, bottoms trimmed, lower stalks peeled
2  tablespoon extra virgin  olive oil
Kosher salt and freshly ground black pepper to taste
1/3 cup bread crumbs
2 tablespoons unsalted butter
2 green onions, thinly sliced
1/4 cup grated white Cheddar cheese
4 eggs
Olive oil for garnish

Light a grill.  Toss the asparagus with olive oil and salt and pepper to taste.    Lay the asparagus on the grill or use a grilling basket.  Grill turning occasionally until browned and tender, about 8-12 minutes.   Transfer asparagus to an ovenproof dish. 

Add 1 tablespoon of the butter to a pan and add bread crumbs, green onions and salt and pepper to taste until bread crumbs are lightly golden.  Transfer to a bowl and add the cheese.

Add remaining butter to a pan and fry eggs until whites are firm and yolks are still soft.   Slide the eggs over the asparagus and top with bread crumb mixture.  Place the dish under a broiler until the topping is browned and crisp.  

Serve with sliced tomatoes
