Watermelon Salad with Feta and Lime

Sweet and salty and enormously refreshing. This watermelon salad is a colorful palate cleanser before or after spicy foods

 

Double this recipe by using about 1 pound of melon (with rind) per person

Try this salad with any melon or combination of fruits


Watermelon Salad with Feta and Lime
Serves 4 

4 lbs watermelon 
3 tablespoons chopped mint leaves, plus whole sprigs for garnish
3/4 cup mild feta, crumbled
Juice of 2 lime
Pinch of salt and pepper, to taste

Pic of watermelon slicesSeed the melon and cut into bite-sized pieces or use a melon baller.  Arrange on plates and dot with the feta and mint. Sprinkle with lime juice and a little salt and pepper. Garnish with mint leaves


Salad Greens (optional)

4 cups of your favorite salad greens, washed and torn into small pieces
1-2 tablespoons extra virgin olive oil
Salt and pepper, to taste

Toss salad greens with a small amount of olive oil.   Lightly season with salt and pepper.  Arrange on platter or individual plates.  Top with the watermelon, feta, lime and mint.
