Watermelon is undoubtedly delicious and outrageously succulent. We usually think of it as a summertime treat but you will enjoy incorporating watermelon into these refreshing recipes.
Watermelon Strawberry Lemonade
Makes 8 cups
So refreshing! Adjust sugar based on sweetness of watermelon. Best served ice cold.
8 cups cubed seeded watermelon
1 cup fresh strawberries, halved
1/2 cup fresh lemon juice
1/2 to 1 cup white sugar
2 cups water
Combine the watermelon, strawberries, lemon juice, sugar, and water in a blender. Blend until smooth.
Watermelon Dip
Makes 4 cups
An unusual and delicately flavored dip for fresh fruits or plain cookies or crackers
8 ounces cream cheese, softened
1 cup sour cream
1/3 cup powdered sugar
2 teaspoons vanilla
4 cups watermelon, cubed and seeded
With an electric mixer, beat cream cheese and watermelon until smooth. Blend in powdered sugar and vanilla. Fold in sour cream. Chill before service.
Sweet and Spicy Watermelon Salsa
Makes 3 cups
Serve this sweet and tangy salsa with cold seafood such as Creole Boiled Shrimp or Crab Salad or as an accompaniment to any Chicken Salad
3 cups seedless watermelon, chopped
1/2 cup green peppers
2 tablespoons lime juice
2 tablespoons cilantro, chopped
1 tablespoon green onion, chopped
1 tablespoon jalapeño peppers
1/2 teaspoon garlic salt
Combine all ingredients, mix well. Cover and refrigerate at least 1 hour. Drain excess liquid and stir before service
Watermelon Salad with Feta and Lime
Serves 4
Sweet and salty and enormously refreshing. This watermelon salad is a colorful palate cleanser before or after spicy foods.
Try this salad with any melon or combination of fruits. Double this recipe by using about 1 pound of melon (with rind) per person
4 pounds seedless watermelon
3 tablespoons chopped mint leaves, plus whole sprigs for garnish
3/4 cup mild feta, crumbled
Juice of 2 lime
Pinch of salt and pepper, to taste
Cut the melon into bite-sized pieces or use a melon baller. Arrange on plates and dot with the feta and mint. Sprinkle with lime juice and a little salt and pepper.
Garnish with mint leaves and serve with Salad Greens
Salad Greens (optional)
4 cups of your favorite salad greens, washed and torn into small pieces
1-2 tablespoons extra virgin olive oil
Salt and pepper, to taste
Toss salad greens with a small amount of olive oil. Lightly season with salt and pepper. Arrange on platter or individual plates. Top with the watermelon, feta, lime and mint.
